Prepare the required spices
Cut the chicken into pieces, marinate it in pepper and wine to remove the smell.
Put some oil in a pan and bring it to a boil, not too much oil, because the chicken has a lot of oil in it.
When the oil is boiling, stir-fry the chicken until the water dries out and the chicken turns white.
Sauté the ginger, garlic and spices. You can smell the spices.
Stir-fry the bean paste until the oil turns red, add soy sauce and dark soy sauce for color, add a little sugar to brighten it up.
Add water. Bring to a boil.
I switched to a cast-iron skillet to keep it warm, so the meat smells great and saves time. By the time it’s boiling, turn off the heat and cook for 40 minutes, the chicken will be tender and flavorful, so you can split it in half and add your favorite side dishes, mushrooms, asparagus, potatoes.
