How to make a quick soup with freshly fallen eyebrows – winter melon and ham soup
Peel the melon and cut into thin slices half a centimetre thick along the cross section.
Thinly slice the ham beforehand. Bring a small saucepan of water to a boil, add the ham slices and shrimp skins, cover and cook for about 10 minutes.
Add the sliced melon, garlic, a little cooking oil, and some salt. Since the ham itself has a salty taste, you need to taste the saltiness of the soup before adding salt.
Continue to cook for 10 minutes, open the pot, sprinkle with green onions, and turn off the heat.
