How to make authentic sweet and sour pork chops
stir-fry raw ribs in a pan
Stir-fry on low heat until golden brown
fish out piece by piece
Plate ready for use.
Heat a little oil and add 5 slices of ginger.
Stir-fry the ribs in a pan, dangling a little wine, until the wine has dried up (to remove the fishy taste of the meat)
Scoop out the ribs for later.
Remove the ginger, reserve the oil and add the tomato sauce, stirring as you fry.
Salt, vinegar and sugar (more) to taste, add salt, vinegar and sugar to taste.
Add the ribs and stir quickly, reduce the sauce and remove from the pan (sprinkle with sesame seeds before serving).
The way it looks on the dinner table. (Should be sprinkled with shallots again.)
