Autumn Essentials – How to Make Autumn Pear Paste
Ten pounds of snow pears
Washed and peeled-
De-pit the dates (date cores are hot and inflammatory)
Dang-dang-dang-dang… break the Luohan fruit! (It’s best to buy the darker kind, so it will cook out a darker color – better looking – my younger Luo Han Guo ← I guess)
Sydney Change! Change! Change! (It’s easier to boil the juice.)
Pour in the tamarind, ginger and dates, bring to a boil over high heat and reduce heat to simmer for 30 minutes. During this time, grind the scallops into powder.
Let cool. Squeeze out the juice with gauze.
Add scallop powder and rock sugar.
Simmer until the pear juice bubbles, then reduce the heat to medium and simmer slowly. Stir well to prevent sticking. Turn off the heat and simmer until the pears are dark brown and bubbly. Pour into a hot glass jar without water or oil (it’s not good to pour when it’s cold!).
Cool completely, store in the refrigerator, and open when you need to drink.
