Tomatoes and eggs were already a match made in heaven, and a sloppy egg baked in the oven with salty ham and pulled cheese is amazing, super flavorful, and eating it is motivation to get up!

How to Make Baked Eggs with Tomato and Cheese
Cut off the top quarter of the tomatoes and hollow out the center.
Add the egg, some salt and freshly ground black pepper to the tomatoes, then the ham.
Roast the tomatoes in a preheated oven at 200° for 15 minutes.
Remove the tomatoes and sprinkle with a generous amount of mozzarella cheese. I like it with a little more cheese, it’s very satisfying!
Return to the oven for another 5 minutes.
