How to make bat cupcakes
Separate the egg whites from the yolks and place each in an oil and water free container. Add corn oil and milk to the egg yolks and mix well.
Sift the low gluten flour and 7g cocoa powder into the yolk mixture and mix well.
Add a few drops of lemon juice and 40g of granulated sugar to the egg whites in three additions, beating until stiff.
Add one third of the egg white to the egg yolk batter and toss to combine. Pour the cake batter into the remaining egg whites and continue to mix well.
Put the cake batter into a piping bag and squeeze it into paper cups.
Bake in preheated oven at 150 degrees for 30 minutes, remove from oven and let cool.
