How to make bean paste buns (two hair)
Pour all the ingredients into the kneading machine and knead until the dough is smooth and soft but not sticky, I kneaded for about 10 minutes!
(No lid needed for the entire kneading process)
Knead the dough for the first fermentation, ferment it until it doubles in size and pokes holes without retracting or collapsing. I used the machine fermentation function to ferment the dough for about an hour and a half.
(The dough is covered throughout fermentation to prevent it from drying out)
Fermentation at room temperature over 30 degrees is fine.
The fermented dough is taken out and kneaded to exhaust. Knead the dough until there are no large air holes visible on the cut side.
Divide the dough into 8 equal portions, and the bean paste filling into 8 equal portions (25g each). Cover the dough with plastic wrap and let it rise for 5-10 minutes.
Take the relaxed dough and roll it out into a circle, wrap the bean paste filling in it and place it in the steamer basket to ferment!
The second fermentation was done until doubled in size and was done in about 40-50 degrees of warm water for about 40 minutes.
(No need to ferment in warm water at room temperature over 30 degrees, room temperature fermentation is fine)
Ferment the dough and steam it in a pan of cold water for about 15 minutes.
After steaming it needs to be smothered for 5 minutes, you can’t open the lid right away.
Steam well and out of the pot!

3, the steaming time is usually 15 minutes. According to the size of the bun to determine, if you do is a super-sized bun should be properly extended steaming time.

5、About the flour: the bun is not picking powder. Low flour taste fluffy, medium flour taste moderate, high flour taste chewy. You can choose the flour according to your favorite taste.
