Regarding the yeast, I just figured out that if the bread is high in sugar, like my current ratio, I must use high sugar resistant yeast, and I’m using Angie’s high sugar resistant!
If you just have sugar-free bread, it doesn’t matter at all, the same applies to making steamed bread.
