Chinese Restaurant 3: How to make Chengdu’s Big Chopped Pork in Casserole
Cook the pork in a pot of cold water for 2 minutes over cold water.
Cut the cooked pork into thin slices, shallots into small pieces, ginger and garlic chopped.
Heat the oil in a wok over a low heat to sizzle the ginger, garlic and pepper.
Add two spoonfuls of Lao Gan Ma and one spoonful of bean paste.
Stir fry the sliced pork.
Stir fry the pork in oil and add the shallots.
Season with light soy sauce to taste, add the dark soy sauce and stir-fry until cooked.
