Consuming Mascarpone (mimicking Basque cheesecake)
Prepare a mixing bowl by adding the mascarpone cheese and stirring it in
Add 60g of sugar and stir to combine.
Then put in an egg yolk (no egg whites)
Give it a stir.
For the cheese batter, take 2 whole eggs and whisk them together.
Beat the whole egg and add the cheese batter in small batches, stirring after each addition.
Then pour in 100ml of light cream and mix thoroughly.
Finally, sift in 10g of flour and stir.
Prepare 6 inch cake moulds, line with baking paper and preheat the oven to 200 degrees Celsius.
Pour the batter into the preheated oven and place on the bottom. The top, if it has started to darken, can be covered with baking paper and baked to prevent the top from burning. When you turn on the oven, watch the temperature and be sure to bring a heatproof hand cover!
After baking, let the cake cool, seal the plastic wrap, put it in the fridge, refrigerate it overnight (remember not the freezer), take it out the next day, cut it into pieces – taste the deliciousness -!
