How to make curry chicken thighs

Wash chicken thighs, cut into knives, break the tendons, add salt, oyster sauce, wine and corn starch, mix well, marinate for 1 hour.
Diced carrots and potatoes, minced garlic, sliced ginger, chopped cilantro, diced onion
Marinate the chicken thighs, sprinkle a little white pepper and fry them over low heat.
Fry a little chicken fat, the surface is slightly charred, you can see blood oozing out of the bones, fry for 2 minutes more and then remove from the oven.
Add some oil to the pan, add the ginger, garlic and onion, turn the heat to high and sauté evenly
Add the carrots, potatoes and curry (it’s lumpy, but I pressed it into a powder to make it easier to stir-fry), and continue to stir-fry.
Stir-fry until the curry is almost melted, add the coconut milk and 750ml of water and bring to a boil over high heat (at this point you can taste the soup to see if the taste is to your liking.)
Then add the chicken thighs Cover with a lid and bring to a boil over medium-high heat, then turn off the heat and rinse with cold water for about 5 minutes. (You can also cook the chicken thighs without turning the pressure cooker for 20-30 minutes with the lid on the top of the pan to remove the bones) (It’s basically fine) (turning the pressure cooker is to save time)
For the pressure cooker operation, put only curry sauce in the pot, the ingredients are packed in a plate (the pressed ingredients are almost too soft to cook again), cook the button mushrooms in the curry sauce, cook them evenly, then add the pressed ingredients and stir evenly, sprinkle with coriander and ready to serve.
