How to make Diced Chicken with Chili (non-fried version)
Cut the chicken into cubes and marinate with a little wine, soy sauce and starch.
Prepare condiments according to your taste: dried chillies cut into two pieces, garlic cut into chunks, ginger sliced, and a handful of peppercorns.
Turn the heat on first and pour some oil into the pan.
When the oil is hot, turn the heat to medium and pour in the chicken, separating the chicken as much as possible without sticking together.
Pour off the used oil, add the new oil, heat and fry the spices, taking care of the chilli seeds and not to paste the pan
Pour in the chicken and stir-fry.
Add a small amount of dark soy sauce to taste and season with salt to taste.
Add peanuts (or leave them on)
Stir-fry a few more times and serve.
