How to make Earl Grey Tea Scones
When all materials are available, weigh out the required quantity for use.
Sift low gluten flour and baking powder, sugar, salt and mix well, add unsalted baking butter (iced) and rub with your hands to form a gravelly shape, add milk and eggs and mix well to form a ball.
Add the Earl Grey tea leaves (crushed in a blender) and mix well, seal with plastic wrap and refrigerate for 30 minutes.
Remove and fold up and down (at this point preheat oven to 200°)
Fold from bottom to top. Repeat 3-5 times, roll out to 2cm, then dust and press the mold.
Brush the surface with the egg wash and bake in the middle of the oven at 200° for 20 minutes (turn in the middle).
It’s really satisfying to see the Sikhs smiling so happily.
