How to make a super-food and easy pumpkin mix.
Slice the squash into slices.
Crush a clove of garlic. Put the sliced pumpkin and garlic on a plate and mix it up. Pour on some peanut oil. (You can leave it on.)
Then steam the pumpkin on a steamer (I put it in the rice cooker and the pumpkin will steam when the rice is ready, very convenient, no fear at all! (over steamed) until the squash is tender, then sprinkle with salt and green onions. Then stir the pumpkin and mix it up.
Use a spoon to take some of the pumpkin sauce and put it on top of the rice. By this point I’ve worked up an appetite.
Stir it a bit more with the rice (very beautiful). The rice had a strong pumpkin flavor, a touch of garlic, and onion flavor. Ended up eating two large bowls.
