Quick recipe for Lotus Root and Pear Soup
When water starts to bubble, add lotus seeds, 5 minutes on high heat, then 5 minutes on low heat.
Add a spoonful of sugar and cover with room temperature water, shake the container for 5 minutes to finish soaking.
Peel the pears, cut into pieces and reserve.
Add pear and silver fungus, bring to a boil over high heat, then simmer for half an hour.
Add icing sugar and cook, stirring, 5 minutes, then turn off the heat. Remove from heat and let cool.
