How to make sweet potato fairy cake
Peel and slice the purple potatoes and steam in a steamer for 15 minutes, then add 30g of sugar while it’s hot!
Add 12 grams of condensed milk and 20 grams of butter and sauté on low heat until soft and ready to serve. I made mashed potatoes!
In a large bowl, add 30g milk powder, 30g sifted cornstarch, 200g low gluten flour, 30g melted butter, add 80g of egg wash, wrap the dough in plastic wrap with gloves and chill in the fridge for 15 minutes, then butter the balls!
Form the mashed purple and honey potatoes into 30g balls each and the butter balls into 20g each!
Wrap crumbled cheese or grated cheese in purple potato balls by 10g each and press the outside into a square with a ball of butter!
Brush the pan with oil and fry the cake until golden brown on both sides.
