How to Stir-Fry Zucchini with Tomatoes
One zucchini, peeled, thinly sliced and reserved.
One tomato, diced, reserved.
Heat a pan with cold oil and sauté the garlic for later.
Pour in the thin zucchini slices and toss to coat evenly.
Toss and sauté until each slice of zucchini is heated, about one minute.
Pour in the tomato cubes and toss to coat evenly.
Cover the pan after flipping for a minute or two.
Open the lid and you will find it cooked and soft, you can add some salt; add two tablespoons of light soy sauce; (add salt, light soy sauce, sugar to taste)
Hot and aromatic, add only salt and soy sauce, the taste is sour (If you don’t like sour, add just half a tomato and sugar to taste)
