Delicious air-dried beef recipe
Prepare 2 kg of beef (preferably red slab), cut into slices about 1.5 cm thick
Cut each slice of beef into strips, do not cut! so as to hang it up.
Marinate the beef, cut into strips but not cut off, with all of the above seasonings for 6–10 hours.
Hang the marinated beef up (I use clothes hangers) to dry. Don’t tan. The process takes 24—40 hours. 24 hours is sufficient if the house is dry. If it’s not very dry, it can be extended to 40 hours.
Cut the dried beef into sections. Then steam in a steamer on low for 70 minutes.
Steamed beef is baked in the oven at 180°C for 15 –20 minutes. If you don’t have an oven, go through the oil quickly, deep fry and place on absorbent paper. Delicious air-dried beef is ok.
