How to make homemade red bean paste
Soak red beans in water overnight
Put the beans in a saucepan, add water that can cover the beans and cook (high to medium heat for about 30 minutes)
Pour the cooked red beans into a wall breaker/cooker (pour some off if there’s too much water)
Make a puree of red beans (finer for better digestion)
Pour the mashed red beans into the pan (no need to put oil in the pan, preferably a non-stick pan), stir-fry on low heat, and keep stirring, stirring, so as not to paste the pan.
Stir-fry until the red bean paste is on the dry side and hangs on the spatula in a state where it doesn’t fall off easily, and then it’s almost ready to serve!
The amount of sugar used can be increased or decreased according to taste and need, but the current amount is not very sweet for a bun filling.
