How to make Honey Cheese and Dragon Fruit Soft serve
Mix the flour, dragon fruit, flour, yeast and sugar and knead out a membrane; add salt and butter and knead out a slightly thick membrane.
Ferment until doubled in size. Mix cheese and sugar during fermentation and refrigerate the filling.
Divide into 10 equal portions.
Ferment for 20 minutes, then fold into the cheese filling.
Ferment until doubled in size, sprinkle with flour.
Preheat the oven to 180 degrees Celsius on the Hays S80.
Place in oven at 180 degrees for 20 minutes. Reduce the oven temperature to 175 degrees Celsius if the colour is too dark.
Remove to a cooling rack to cool.
Very soft and tasty, but the colour will change, which can’t be helped.
Packed in an airtight container, can be kept at room temperature for 2-3 days. Can be eaten as a gift. If you can’t finish it, freeze it and take it out at night to eat the next day.
