How to make sea snail noodles
Knead the noodles, make the noodles stiffer, and weigh the grams the next time you knead the noodles. Wake the dough for an hour or more. Roll out the dough, a little thicker, and cut into small squares.
Prepare the sushi curtain, place the cubes as pictured.
Twist with the belly of your thumb in the direction shown.
Don’t twist it too hard, just sprinkle some on the sushi curtain to prevent it from sticking.
