[Ketogenic] Cheesy Roasted Creamed Cauliflower
Half a cauliflower, chopped. Have cauliflower rice and you can use it straight away. Microwave on high for three minutes.
Heat the bacon in the microwave until it becomes oily and a little dry and burnt.
Add light cream and water. The ratio is up to you, I think 2:1 is richer, 1:1 for lighter tastes. Add salt only and taste it yourself. Then mix in the cauliflower rice and the psyllium husk powder. (The latter is to make the cream thicker and coat the cauliflower)
Sprinkle the mozzarella on top, put it in the preheated oven at 180 degrees, after 15 minutes, it was a bit burnt like my plate. After 15 minutes, it was a bit burnt like my dish. But it was delicious.
The amount is a bit too much for two meals, but so satisfying!
