Marinate the bok choy overnight with salt, rinse the salt when you make it the next day and set aside to control the water for later. The best thing to do is to choose solid and tightly packed fresh bok choy. The salt I use is fine salt, my mother always use coarse salt, but unfortunately I forgot to buy the ingredients.
Peel garlic to peel garlic. Peel the ginger. Peel the garlic and cut off the heel of the head for better taste when eating. Mash it all together later.
Cut the shallots and put them aside to be mashed later.
This is a large spoonful of glutinous rice flour, filled with two spoonfuls. The key point is to boil the rice in cold water without any lumps in it, and prepare about 600g of water in a pot. Pour in the glutinous rice flour water, don’t wait until it is turned over. Don’t wait to turn it over. Then start stirring on low heat, keep stirring until it becomes sticky, turn off the heat. Leave it to cool in the coldest place in your house. Meanwhile, prepare the other ingredients.
Cut the apples and pears into small pieces and puree them. The best ones are the ones from home, but you can’t get them, so I chose the Red Fuji and Crystal pears. Pick the water split large color red, sweeter, delicious

Love to buy and pickle the rest together. Here I chose white radish, cucumber and basil leaves. These are best salted for at least 2 hours and then rinsed in water before use.
The carrots and white radishes are all finely shredded and put together with the other ingredients that you just pureed. It’s best to prepare a large pot because there will be a lot of this sauce done.
Put in a mixture of two types of chili powder and chopped shallots. (Some people like to put in chives, I like small onions)
Then add the cooled glutinous rice paste, honey, fish sauce, chicken essence, sugar and monosodium glutamate. Mix well.
Such a big bowl!
Here’s the point again! Wear disposable gloves, contact lens wearers wear two layers of gloves or your gloves will show, you know! The dried cabbage is placed on top of the sauce, and the leaves are removed one by one, spreading the sauce evenly over the top, layer by layer. The same goes for the sorrel leaves, spread one or two sheets in a single layer. Spread one or two sheets on top of each other and seal. Put it in the fridge and let it ferment for 2 days before it starts to taste delicious.
Cucumber and radish
