Clean the fish and make knife marks on the back of the fish.
Coat the back of the fish with salt and cornstarch and set aside to marinate.
Prepare chillies, garlic and ginger
Heat the oil in a cold pan, fry the fish in the oil, one side at a time, turn over and fry the other side.
Frying a little too much
When it’s done, remove from the pan, place in a bowl and set aside
Once the fish is out of the pan, fry the spices in the remaining oil
Add the chillies, garlic and ginger, and while they are sautéing, add salt, light soy sauce and Sriracha, then add some water
Put the fish in the pan, pour the spices over the fish and cover the pan
Cover the pot and cook for 1-2 minutes, watching the water dry out.
Taste salty and ready to serve
