How to make peach crumble
Soften the fresh butter (or lard) ahead of time at room temperature (solid, never heat to liquid).
Using a whisk (or chef’s blender), beat the softened solid butter (or lard) slightly on low speed.
Just beat until it’s this fine, creamy consistency.
Take two egg yolks and stick a little egg white on them. (Please use room temperature eggs, refrigerated egg yolks, when mixed with butter or lard, may cause water and oil to separate).
Beat the egg yolks with the same whisk you used to beat the butter. (Pour out a little of the egg yolk mixture and brush it for later).
Mix the sugar, butter and egg yolks.
Mix well with a silicone stick.
Sift the flour, cornstarch, baking soda, baking powder and salt into the mixture (the flour, cornstarch, baking soda, baking powder and salt must be mixed well or the peach cakes will taste bitter after baking).
Mix the dough using either the cut and mix method or the press and mix method.
Mix the dough.
Divide the dough into doses of about 25 grams a piece and knead lightly (never knead hard or over-knead) to have exactly 16.
Line a baking sheet with parchment paper and place the agents in the baking sheet, reserving the space between the agents at a greater distance.
Using the end of a silicone knife, poke a small hole in the center of the agent, turning it around to create a round hole.
That’s about it.
Mix the egg yolks and water in a 1:1 ratio and brush the surface of the dough with a brush in a thin, even layer of egg wash.
Sprinkle with sesame seeds.
Place in the preheated oven.
Bake at 180 degree Celsius in a normal flat oven for about 20 minutes.
Bake at 150 degrees Celsius for about 18 minutes.
The dough is done when the surface is cracked and colored.
Remove from the oven.
After baking, wait for it to cool before picking it up and store it in a sealed bag.
