Guizhou Sour Soup
How to make pig’s trotters in sour soup
Cut up pieces of pig’s feet, cook in cold water to remove the foam and pour out. Wash with water several times.
Add wine, ginger and soy sauce to pressure cooker and cook with rice cooking function.
Remove the cooked pig’s feet from the water, lay them out on the oven for 180 minutes and bake for 30 minutes. The roasted pig’s feet will have more texture. If you don’t have an oven at home, you can reduce this step. The picture shows the roasted pig’s feet.
Popping the pan with ginger and scallions
Pour in a bowl of Guizhou red sour soup and stir-fry.
Add the tomatoes and stir-fry together.
Pour in the broth that has been boiling the pig’s feet.
Add the roasted pig’s feet.
Bring to a boil over high heat and cook for 5 minutes. Preheat the bean sprouts and lettuce and lay them in the bottom of the pot. Remove the cooked pig’s feet from the sour soup and place the vegetable noodles on top of the soup. Sprinkle with coriander. Guizhou sour soup has sour, salty and spicy taste, usually do not need to put salt.
Make dipping sauce. I put garlic, small chili, scallions, coriander, Guizhou sour soup. Boil hot oil and pour over.
