How to make meatloaf cake rolls with shallots
Prepare the ingredients, wash and dry the shallots, 5 eggs 55-60g, separate the yolks, egg whites + lemon juice in an oil and water free bowl, send to the freezer.
Milk + corn oil hand mix
Stir until it turns white and emulsified, stirring a little longer
Sift low flour and mix well with a stroke or z.
Add the egg yolks and mix well in a row or z.
Make the egg yolk batter and reserve.
Add granulated sugar to egg whites in 3 batches, whisking
Preheat the oven to 160 degrees on a low heat setting.
Add 1/3 of the meringue to the egg yolk batter and toss to combine, tossing, not mixing.
Fold in the remaining meringue, tossing well so that the cake batter is creamy and sticky!
28 baking sheet lined with parchment paper, pour the cake batter into the pan, use a spatula to gently scrape the surface, a little uneven is okay but also sprinkle the shallots and meat loaf, shake the pan a few times, shake out big bubbles.
Sprinkle the shallots, meat loaf, leave the shallots without water, place in the lower middle oven at 155 degrees for 25 minutes, turn the oven at 160 degrees for 5 minutes.
Bake the cake slices directly in the baking pan until warm to the touch before removing.

Cut off the sides on the diagonal, spread the salad dressing and sprinkle the meat loaf.
Roll up with the help of a rolling pin and set for 30 minutes.
Cut into pieces, the tissue is very soft.
