How to Make Meatloaf Scallops
Pour the milk and vegetable oil into a bowl and whisk until emulsified.
Sift in the low gluten flour
Beat with a whisk using the sign of ten technique until grain-free.
Separate the egg whites from the yolks, taking care not to get a trace of egg yolk on the whites when separating them (the bowl must be free of oil and water).
Pour in the egg yolks and continue beating with the same “10” technique as the whisk.
Add a few drops of lemon juice or white vinegar and beat the egg whites with an electric mixer on high speed until they are fisheye frothy. Granulated sugar. (Begin preheating oven at 165 degrees for 10 minutes on top and bottom)
Add two thirds of the granulated sugar and continue beating at high speed until a fine foam appears.
Beat until foam forms a pattern and add the remaining granulated sugar.
Whip until wet, lift up the whisk to a large hook and whip well.
Put 1/3 of the meringue into the egg yolk batter and mix with a silicone spatula, tossing and cutting.
Pour 2/3 of the batter into the meringue, using the same technique, and mix until the egg whites are fully incorporated into the batter.
I used a 28×28 square pan lined with parchment paper to make it easier to release the mold and pour the batter into the baking dish. Gently slam the pan from top to bottom to remove any air bubbles.
Bake in preheated oven on medium heat at 165 degrees for 20 minutes, depending on the temperature of your oven.
When the cake is done baking, quickly remove the cake from the oven, slam it vertically to shake out the heat, then immediately pull the parchment paper onto the baking sheet and set aside to cool.
Get a round lid and press out round cake slices (size your own)
Take a slice of cake and spread it with salad dressing.
I’m taking a slice of cake and gluing it together.
Finish by spreading the salad dressing all over the cake body evenly.
Throw in the seaweed meatloaf and roll it around so that the whole cake is evenly coated in meatloaf, pressing it down a little with your hands
The more evenly you spread the salad dressing, the more seaweed gravy you’ll have on the wrap!
