How to make shrimp and leek box
Make the dough first. Add salt to the flour and warm water to the dough, stirring as you pour. Once the flour gradually forms small lumps, knead the dough with your hands.
Seal the dough with plastic wrap and place in the freezer for at least half an hour.
Prepare 4 eggs.
Fry and chop.
Wash and chop the leeks, wash and chop the pickles and vegetable oil and mix well.
Add the eggs, shrimp skin, sesame oil, salt, chicken broth and white pepper and mix well again.
Divide the chilled dough into 15 equal-sized portions.
Roll out the dough into a stick (thick in the middle and thin on all sides) with a diameter ratio of not more than 15cm.
Add the filling to the dough and pinch well.
Heat oil in a pan, about halfway up the box. Fry on both sides over medium-low heat for about 3 minutes, remove from the pan.
