Today, I suddenly wanted to eat chili egg scrambled, and was also seeded by other videos that I had never made before.
Then I remembered that the star of The Man Who Does the Housework, Wei Dahun, had made an amazing tasting Northeast-specific chili egg noodle dish, and I decided to try it too!

I personally prefer these large, long peppers to bell peppers, they are easier to slice in long thin strips, have better flavor, and are slightly spicier and more flavorful.
Wash the peppers and cut them into rings. You don’t have to dig out the seeds, they will fall out easily after you cut them. (Note: You can wear gloves if you’re afraid of getting spicy from cutting chili peppers)
This time I used these green eggs and they were really good. The yolks are orange-yellow and the scrambled eggs are also more yellow and have a smoother and better texture.
Beat three eggs, mix well and reserve.
Scramble the eggs you have just beaten. The color is especially nice (the real thing is even more yellow).
Make the sauce, which is exactly what I make it to my liking. Chop some garlic (the knife doesn’t work at first glance), add soy sauce, oyster sauce, sesame oil, salt and sugar, and mix well.
Next, add the chillies to the pan, stir-fry them a bit, then add the scrambled eggs and the “secret” sauce. Stir fry until completely browned. Add a little more water, and then thicken with cornstarch and water, and our chili egg marinade will be ready!
In the show, Wei Dahun was making his own noodles, and as a Cantonese, I’m still not that great at it. So I used this hygienic noodle from Old Timers, which is cost effective, has a smoother texture, but is easy to absorb flavors, and is perfect for mixing with marinade.
The cooked noodles are pulled up, a little noodle soup is added (these noodles are easy to stick together), and mixed with our good marinade, perfect! This is really easy and I had great success the first time I did it! If you’re interested, give it a try too!
