How to make spicy marinated pork rice
Dried mushrooms soaked and diced, chopped onion, ginger and garlic, diced pork and onion.
Pour oil in a pan and slow fry diced onions on low heat to make the onion crisp (this is the soul of marinated rice!) When the onion shrinks and the edges turn black, strain the oil and reserve.
When the meat turns white, add the mushrooms, crispy onion, onion, ginger, garlic, dark soy sauce, light soy sauce, cooking wine and stir-fry evenly.
Pour the cooked marinated pork into a cast iron skillet, add lukewarm water, bring to a boil, reduce heat, add star anise and rock sugar, add two hard-boiled eggs and simmer for about 30 minutes (the length of time depends on personal preference and the size of the diced meat), wait for the sauce to thicken (don’t wait for the sauce to dry out, it’s good for mixing with rice), add salt and finish.
