How to Make Steamed Dumplings with Willow Leaves
Soak the minced onion and garlic in water for 1 minute, make onion and ginger water for later.
Add sugar, salt and light soy sauce to the minced meat and mix well.
Add the onion-ginger water in three times, stirring thoroughly in the same direction each time until the water is completely absorbed before adding the next time. The meat mixture will be slightly white in color and very sticky.
Place the meat mixture in the middle of the dumpling skin, with the meat mixture in an oval shape. Try a few times to get the right amount of meat mixture.
Squeeze the skin into a fold, then squeeze one fold to the left and one fold to the right.
Note: For each pleat, use your index finger and thumb to lift and bend forward a little so that the pleats will be nice and slender.
Line a steamer pan with parchment paper to prevent sticking and place the dumplings in it. When water boils, steam on high heat for 10 minutes.
