How to make asparagus and potato stew
Soak the dried bamboo shoots 12 hours in advance, changing the water once halfway through.
Sliced ginger and knotted shallots

Cut bamboo shoots into segments
Peel and halve small potatoes
cut the garlic into segments
Without oil in the pan, add the pork and stir-fry over low heat.
Lightly brown the pork in oil, add the ginger, shallot knots, star anise, cinnamon and bay leaves.
Add the wine, soy sauce and soy sauce, stir-fry well, then add the dried bamboo shoots and stir-fry well.
Add water, bring to a boil, reduce heat to medium and simmer for 30 minutes.
Add the potatoes, chicken stock and salt and continue to simmer for 20 minutes.
When the sauce thickens, add the garlic and stir-fry evenly.
