How to make stir-fried beef with cold melon
Wash the beef, dry it with kitchen paper, cut it into thin slices and toss it with olive oil and a dash of black pepper.
Remove the white melon, dredge with a spoon and cut into 1cm thick slices.

XO sauce, hoisin sauce, oyster sauce with 5g cooking wine, 70g water, corn starch and mix well.
Add the oil to the pan, spread the beef and use a spatula on the opposite side when the bottom starts to turn brown
Sauté until 7-8 ripe and serve.
Pour the cold melon into a pan with about 10g of water and cover
When the melon turns green, you can put in shredded chilies
Add the beef and stir-fry, pour in the sauce and stir-fry until the sauce sticks to the beef and melon.
