How to Make Noodles with Scallion and Oil
One teaspoon of dark soy sauce, three teaspoons of light soy sauce, one teaspoon of sugar, and mix well.
Wash the shallots. Take only the green parts.
Heat the oil in a pan and add the green onions.
Deep fry the shallots until they’re green and charred, when you can smell the fragrant shallot oil.
Pour in the sauce.
Cook it a little.
Once the water is boiling, add the noodles and cook.
Drain the water a few times.
Pour the water out.
Pour over the simmering onion sauce.
Stir it up and you’re ready to go.
