light soy sauce
baby Chinese cabbage (mini-sized variety)
How to make fried rice
Prepare ingredients:Choose veggies and meat dishes according to your preference (I put meat drippings and sausage to make the rice more flavorful).
1 when cutting vegetables are cut into similar size dice (so that the degree of cooked vegetables are similar, and better look).
2. The baby vegetables and leaves are cut separately on the plate (leaves do not need to be cut into pieces, strips can be it).
Beat the egg: beat the egg with a little salt.
Prepare the overnight rice (the rice should not be too wet when steaming).
Dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang, dang.
Heat the oil in a dry pan and add the egg mixture.
Quickly stir the mixture as if you were beating an egg (note ❗ Using chopsticks will loosen the egg more than a spatula, so the egg will be looser and less likely to break into chunks).
Serve the eggs as soon as they are formed, but don’t take long to scramble them (they will get old if you put them back in the pan later).
Add oil to the frying pan (you don’t need to wash the pan to finish frying), add the onion and fry.
Add the drippings and sausage (depending on your choice of ingredients, add the raw meat first).
Add the shrimp pieces and continue to stir-fry.
Add the baby vegetables (after the raw meat, add the vegetables and stir-fry the undercooked ones first).
Add the rest of the ingredients: ham hock, green pepper, baby cabbage leaves, and stir-fry.
Start to add the spices!
Turn up the heat to the lowest setting.
Pour the salt and watch the amount! (Not too much, just a little bit, because there is salt in the ingredients, and other seasonings with salt will be added later).
Add a little bit of oyster sauce. (Beginners can pour it on a spatula like I did, it’s easier to control the amount, if there’s more you can pour out a little)
Add the light soy sauce, a toss.
After that turn evenly.
Turn the heat down to medium-low and add the leftover rice.
Note❗❗ Chop the rice with a spatula, one grain at a time kind of rice.
Come on, chop and chop with me
Pour in the egg and five spice powder and continue to stir-fry.
Ou up, turn off the flame Out of the pan.
Serve the fried rice in a bowl and press it down hard with a spoon.
Put a plate on top of the fried rice after pressing it down, then snap it over like this. (❗❗ Don’t just snap it, make sure the plate goes on top of the bowl first, should I make that clear)
Take the plate off, done!!!
I put in some Lao Ganma, you can choose according to your personal taste, you can also scatter some green onions and green onions, great!
