A super easy way to make eggplant and beans
Wash and cut the eggplant and blanch it until it’s five-years-old, and since it absorbs oil, it’s dry-fried for a few minutes before going into the pan!
Wash the long beans, remove the head, pinch the tail and cut into segments, blanch until they are ripe.
Add some oil and stir-fry the eggplant, adding a little more oil than shown in the picture.
Then add the beans and toss in the seasoning.
Don’t fry it for too long, it will wrinkle more if you overwork it.
