The material is shown in the figure
Slice open the back of the cleaned bass, the meat is the thickest here.
Squeeze out the onion juice and rub it over the fish for a while (ง -̀_́-ง). Add in the ginger and wine, which you can stuff in the belly and back of the fish, and marinate for about 10 minutes.
Marinated it can be opened to steam it, I am used to cold water when the fish plate into.
After the water boils, put a few slices of thick ginger, so the steam can be 360 degrees to the fish.
Put the fish on steam, generally a catty of fish steam for 6 minutes, turn off the heat and then virtual steam for two minutes.
More than one pound of steam for 8-10 minutes is enough.
Prepare the shredded green onions. (I’ll just cut it randomly, ignore my knife skills ( -̥́ ˍ̀ू ).
When the fish is done steaming, pour out the water inside, then spread the shredded green onions on top.
Add soy sauce, or you can use soy sauce. I’ve used Lee*Kee’s soy sauce which is saltier than soy sauce, so reduce the amount you use.
Ready to heat a pot of oil on it, you can add a few peppercorns, burn out of the oil is very fragrant, hot oil to peppercorns out.
The most exciting part is to pour oil on it, sting it, finish scattering flowers (๑ºั╰╯ºั๑).
2. You can also use martial arts fish or cinnamon fish and so on.
