How to make sweet, sour and spicy yellow croaker
Yellow croaker, gutted and cleaned, is marinated in a thin layer of salt for at least half an hour.
Heat enough oil in a pan and fry the yellow croaker in it.
Fry until golden brown and set on one side, turn over and cook on the other side.
Leave the oil in the pan to fry the fish, ginger, garlic and chillies to pop.
Add the sauce and a small half bowl of water.
Boil the sauce, add cornstarch and a little water, reduce the sauce until slightly thickened.
Just pour the sauce on top of the fish.
