Wash the shrimp. Pick out the threads, squeeze out the brains, and trim off the tips and whiskers from the heads of the shrimp. Ready to use. Except for the threads, which must be removed, the rest is up to you.
When the oil is hot, add the ginger and fry the ginger to taste.
Shrimp clutch a bit of water, or control the water in advance, into the fried ginger aroma of the oil.
Stir-fry repeatedly, turning brown on both sides.
