How to Make Hoofflower Soup
Soak the white beans 4 hours or more in advance!
Tie a knot in one green onion and slice the other green onions and scallions.
Put the pig’s feet, onion knots and 3 slices of ginger in a pan, add water to cover, add a spoonful of wine, bring to a boil over high heat, remove the foam after 3 minutes and remove the pig’s feet from the pan.
In a crockpot (I use a rice cooker) put the drained pig’s feet, soaked white beans, ginger, knotted onion and star anise, pour in a little pepper, add water and start to cook for about 3 hours.
(It only takes about 2 hours if you’re simmering in an open-flame casserole)
The soup will end up creamy (yellowed by the white beans haha)
Choose supermarket-processed pig’s trotters, cut into small pieces
