How to make whole wheat and sesame pretzels (for Funburnt X5)
Add the dough ingredients to the mixer and mix (water is added or subtracted according to flour absorption).
Mix until the dough is smooth.
Switch the fermentation function for fermentation.Fermentation at 35 degrees for about 50 minutes.
Ferment to about 1.5-2 times its size
Mix the shortening ingredients during
Roll out into a rectangle, cover with plastic wrap and refrigerate for 20 minutes.
Knead the dough and roll it out into a rectangle.
Put on the prepared shortbread.
Roll it up from the bottom and pinch it closed.
Use a spatula to cut into several equal doses
The dough is closed at both ends.
Roll out into a cow’s tongue. Fold up (as pictured) to do the rest in order
Spray the surface of the dough with water and stick to the sesame seeds.
Place in the oven for secondary fermentation, ferment at 30 degrees for about 30 minutes (put a pot of hot water in the oven to maintain humidity).
Preheat oven to 200 degrees for 20 minutes, cover with foil if you have enough color on the surface.
